Popcorn is a fantastic snack option. It is full of antioxidants and fiber and keeps you satiated for hours. I am NOT talking about microwave popcorn, which is full of salt, butter and chemicals. The way you prepare it is what makes it good for you or not so good for you. I enjoy popping with coconut oil, which has proven to be a really heart healthy oil. Recent studies show that coconut oil (in small amounts) can help to lower cholesterol, assist our bodies in fighting many viruses and bacteria, balance hormones, increase metabolism and energy and can help you to actually lose weight. So, replacing the butter on your popcorn with coconut oil is a great idea since butter will make you fat and coconut oil will help you lose fat!
This is how I make my popcorn with coconut oil:
Lightly coat the bottom of a pot with a thin layer of coconut oil
Add a single layer of popcorn kernels over top of the oil
Cover the pot and place over medium heat
Melt a tablespoon or 2 of coconut oil and set aside
When the popping starts to slow down after a few minutes, it’s done
Carefully remove the lid and transfer into a bowl
Pour the remaining melted coconut oil over the popcorn and top with a little sea salt
You can also add toasted coconut flakes, maybe some nutritional yeast if you prefer a more nutty/cheesy flavor, you can add some herbs like parsley or rosemary to the oil… So many possibilities! OMG Obsessed!
