Kale has a tougher consistency than most greens. It may take you a minute to get used to it. Give it a chance. This is my husband’s all time favorite salad and definitely tops my list. I hope you enjoy it, too!
Crunchy Kale Salad:
1 bunch of curly kale chopped into bite sized pieces
1 shredded carrot
a handful of raw sunflower seeds
a shallot chopped
a little olive oil
lots of fresh lemon juice
Add all ingredients into a large bowl and mix together with your hands or tongs. I like to prepare it a few hours in advance and let it marinate it the fridge for a while. OMG OBSESSED!
