I am raising a little veggie boy. Simon’s diet consists mostly of fruits, vegetables, whole grains and beans. He gets everything he needs from those foods and his doctor is on board. I was blessed with a really great eater. Simon’s favorite meal is brown rice and black beans, he’s obsessed with potatoes, can’t get enough broccoli or asparagus and drinks his green juice and smoothies like nobody’s business. I am lucky that he enjoys those foods. Though he is on a primarily plant based diet, I am not terribly strict. I don’t ever want him to think certain foods are restricted or that he is deprived of anything. If someone offers him a cookie or a little ice cream, he is welcome to have some, in moderation as treats should be.
When Simon was a baby (now almost 1 1/2) I made his food. Not because I am some fabulous earth mother, but, because it was really easy. I’d steam and mash up some sweet potato, blend up a little zucchini, make apple sauce with cinnamon… I enjoyed it and I knew what was going into it so that made me feel good. Sometimes I would throw something I made in a jar when we would go out but a lot of times, when running out the door, I would take an Earth’s Best Pouch with us in the diaper bag.
