Thanksgiving is definitely at the top of my “Favorite Holidays List”. I have so much to be thankful for and have never been happier (or stressed out, but, the happiness outweighs the stress
). As far as Thanksgiving food is concerned, the Turkey tends to get all the glory. I’m not a big meat eater, though, I’m sure I will indulge in a little piece or two. But, for me, it’s not the turkey that is the star of our table. The side dishes are far more intriguing to my palate! This year I am going to try making a recipe I found while leafing through the pages of Self Magazine: Cider-Cinnamon Brussels Sprouts! Sounds AMAZING! Thought I’d share the recipe in case you wanted to try it, too!
1 tbsp olive oil
2 cups brussels sprouts, halved
1 large apple, diced
1 large pear, diced
1 cup apple cider
1/4 tsp cinnamon
In a large pan over medium heat, heat oil. Cook brussels sprouts cut side down, flipping once, until browned, 10 to 12 minutes. Add apple and pear. Cook until soft, 5 minutes. Add cider and cinnamon; simmer, stirring, until all liquid cooks away.
145 calories per serving, 4 g fat (1 g saturated) 29 g carbs, 5 g fiber, 2 g protein.
