Bill Maher said, “The answer is not another pill, the answer is spinach!” As I just finished enjoying a giant bowl of these glorious greens, I couldn’t agree more.
My obsession with spinach began at a very early age. Honestly, I ate it because Popeye ate it. And he proved to be strong to the finish. Being an athlete (I was a gymnast growing up) it was so important for me to be strong and healthy. So, I ate up! When I was pregnant, especially, I consumed so much of it that I thought I may give birth to a little bundle of spinach as apposed to the bundle of joy that I actually delivered. We always joked that the reason my son was so active in the womb, was because I fed him so well… loads of spinach!
Spinach is extremely rich in antioxidants, high in vitamins A, C, E, K, B12, B6, folic acid, magnesium, folate, iron, calcium, copper, potassium, protein, phosphorous, zinc, niacin, selenium aaaaand omega-3 fatty acids. *breathe* Can you think of a more perfect food?
You can add it to everything. A wrap, a sandwich, pasta, a pizza…. Or just enjoy a great big salad with lots of other veggies and fruits tossed in a little lemon and olive oil or a flavorful vinaigrette. Eat lots of it! Eat it every day! Be OMG OBSESSED with SPINACH!!!
* I pureed some for my son today and he LOVED it. Last week was avocado, this week is spinach.
